I'd probably sit through a few CD's worth of Broadcast outtakes. From any of their albums.
Although I'd love to hear the different versions of "Loose" from the Stooge's album.
This is probably too obvious, but any Beatles recording session post-Rubber Soul would totally captivate me. Also, the Big Star sessions for #1 Record and Radio City; some outtakes were just released on a comp. and they were pretty great.
I just picked up the Complete Recording Sessions of Shooby Taylor and it's truly inspiring. You wish it wouldn't end.
Maybe a T-Pain joint without the auto-tune on his vocals?

"808s and Heartbreak," the demos. Those could probably be described in one word: outoftune.
"Kind of Blue". Oh, wait - that IS the whole session!* Those guys were amazing.....
* Exception: I think one of the tracks was actually a second take, and the later re-releases included both. But still.
I didn't realize that about Kind of Blue. Incredible. Good bands/artists can catch lightning in a bottle. I think Deerhunter recorded Microcastle in a week at Rare Book Room in NYC.
